Mango Chutney Recipe
Cutney of Spiced, Green Mangoes
- Mix together in a blender into a coarse paste:
- 2 small or 1 large hard (unripe) mangoes (or apples), chopped into chunks (about 2 cups)
- 1 Tablespoon roasted peanuts
- 1 Tablespoon brown sugar (or more to taste)
- 1 Tablespoon fresh coriander leaves (cilantro)
- 1 teaspoon coriander seeds
- 1 teaspoon cumin seeds
- 1 teaspoon salt (or to taste)
- 1 teaspoon hot red pepper powder sugar to taste
- Heat in a saucepan until the seeds pop:
- 1 Tablespoon vegetable oil
- pinch hing
- 1/2 teaspoon cumin/mustard/sesame seed mixture
- Stir the oil mixture into the mango mixture
