Spicy Snack Mix Recipe
Seasoned Puffed Rice with Peanuts and Roasted Chickpeas
- In a large saucepan, heat:
- 2 1/2 TBS vegetable oil
- pinch hing
- 1/2 teaspoon cumin/mustard/sesame seed mixture
- When the seeds pop, add and roast in the pan:
- 1/4 cup raw peanuts
- Next, add:
- 2 1/2 TBS roasted Indian chickpeas
- 1 TBS fresh coriander leaves (cilantro), chopped
- Remove from the heat, and add:
- 2-3 Indian bay leaves
- 1 1/2 teaspoons cumin/coriander powder
- 1/2 teaspoon turmeric
- 1/4 tespoon hot red pepper powder
- 1/4 teaspoon garam masala
- Now add:
- 2 1/2 - 3 cups puffed rice
1 teaspoon salt
- Mix very well and adjust spices to taste. You may add a small amount of popped popcorn, if you wish.
