To make the dough, mix in a bowl (or use leftover samosa dough):
1 cup white flour
2 teaspoons rice flour
4 teaspoons vegetable oil
1/4 teaspoon salt
Add water gradually (about 2-3 TBS) until the dough holds together; knead well. Roll into a ball and cover with a moist cloth. Let rest about 20 minutes.
Sprinkle on and knead in:
1/2 teaspoon oregano seeds (ajama)
1/4 teaspoon black numkin (opt.)
salt to taste
Roll into a circle 12" in diameter. Cut immediately into diamonds with lines about 1 1/2" apart; deep fry until browned.
