Wada Recipe

Fried Whole Wheat And Chickpea Flour Rounds

In a medium-sized bowl, combine well by hand:
3/4 cup Indian whole wheat flour
1/4 cup chickpea flour
1/2 Tablespoon fresh coriander leaves (cilantro), chopped
1/2 Tablespoon sesame seeds
1 teaspoon cumin/coriander powder
1/2 teaspoon salt
1/4 teaspoon turmeric
1/4 teaspoon hot red pepper powder, or to taste
pinch hing
Add about 2/3 cup water, enough to make a sticky dough
Lay a very wet paper towel on the counter. With wet fingers, press balls of dough into pancakes of cardboard thickness.
Deep fry in oil until browned, then drain on paper towels.
