Coriander Wada Recipe
Steamed And Sautéed Chickpea Flour Rounds
- In a bowl, mix together:
- 1 cup chickpea flour
- 1/2 cup fresh coriander leaves (cilantro), chopped
- 2 teaspoons cumin/coriander powder
- 1 teaspoon salt
- 1/2 teaspoon sesame seeds
- 1/2 teaspoon hot red pepper powder
- 1/2 teaspoon turmeric
- pinch hing
- 2 Tablespoons vegetable oil
- Add about 1 1/2 cups warm water, a little at a time, enough to make a slightly sticky dough. With wet hands, roll into small sausage-shapes. Cook 20-25 minutes under medium pressure in a pressure cooker, or by another method (such as steaming) until a sharp knife poked through the dough comes out clean. Slice into rounds about 1/4" thick.
- In a saucepan or frying pan, heat:
- 1 Tablespoon vegetable oil
- pinch hing
- 1 teaspoon sesame seeds
- 1/4 teaspoon cumin/mustard/sesame seed mixture
- When the seeds pop, add the rounds to the saucepan, mix, and add more salt to taste. Serve.
