Pakora (Bhaji) Recipe
Spicy, Deep-fried Chickpea Flour Dumplings
- In a bowl, mix:
- 6 Tablespoons rice flour
- 2 1/4 cups chickpea flour
- Add spices:
- 1 1/2 teaspoons salt
- 3/4 teaspoon oregano seeds (ajama)
- 3/4 teaspoon hot red pepper powder (opt.)
- 3/4 teaspoon cumin seeds
- 3/4 teaspoon cumin/coriander powder
- 1/4-1/2 teaspoon turmeric
- 1/8 teaspoon baking soda
- Mix in:
- 2 1/4 cups water or enough to make a thick batter
- Add:
- 3 small onions, coarsely chopped
- 1 fresh hot pepper, chopped large
- 1 1/2 Tablespoons cauliflower, chopped (or other raw veg., eg. spinach)
- 1 1/2 Tablespoons fresh coriander, chopped
- Stir well to combine, then remove the large hot pepper pieces. Heat some oil in a deep fryer, fry the mixture 1 Tablespoonful at a time, and drain.
- These may be served with Apple Butter Chutney, pg. 36, or Coriander Chutney, pg. 38.
