Saffron Sweet Rice Recipe
Rice Seasoned With Saffron And Sweetened With Sugar
- In a saucepan, combine:
- 3 1/2 cups water
- 2 cups uncooked basmati rice
- Bring to a boil, cover, and simmer on low heat for 25-30 minutes, until the water is absorbed.
- In a bowl, mix:
- the cooked basmati rice (about 4 cups)
- 2/3 cup sugar
- 1/4 teaspoon turmeric
- 1/4 teaspoon crushed saffron
- In a saucepan, melt:
- 4 teaspoons ghee
- Add to the saucepan and sauté:
- 2 cinnamon sticks, crushed or broken into 2-4 pieces
- 8-10 whole cloves
- 8-10 whole green cardamoms, or 1 teaspoon cardamom powder
- 8-10 whole black peppercorns
- When spice mixture "pops," add the rice mixture. Cover and sauté until warmed through.
- You may remove the whole spices before serving, or not; just advise your family or guests to avoid eating them.
